- Blade made of steel 420 for food use (martensitic steel according to EN10088-2 2005): This high-quality stainless steel is perfectly suited for food cutting work. It has a perfect cutting edge and is easy to sharpen, even for an amateur. Its chromium content prevents it from rusting. It is used by the majority of European cutlers.
